Honor a human.
I am inspired by Ghandi and his commitment to non-violence.
A mother: “Ghandiji, please tell my son to stop eating so much sugar, it is bad for his health.”
Ghandi: “Come back in a week, with your son and I will tell him.”
A week later,
Ghandi: “Stop eating so much sugar, it is bad for your health.”
the mother: “Why could you not tell him last week?”
Ghandi: “First I had to stop eating sugar myself, before I could tell someone else not to.”
I like that he practices what he preaches. Along the same line, I admire and appreciate Barbara Kingsolver, author of the book Animal, Vegetable, Miracle. She too, embodies a commitment to the slow food movement and local food source principle that saves thousands of wasted food transport fuel gallons.
This recipe is for both of them, inspired by Kingsolver’s recipe for eggs in a nest and a childhood favorite, frog in a hole.
Friends in a Nest
1 cup of greens such as chard, kale or collards, cut chiffonade
I am still working on this one with some kind of mock egg with toast and cheesy sauce with Indian spices
