Best Sandwich Ever
Recently I was invited to a BLT party. That’s right, Bacon, Lettuce and Tomato. The farmers market is bursting with tomatoes of all shapes and colors. The local baker provided the bread, we said “yes” and “could we bring some vegan bacon?” I told a friend about the party and he thought it was a GLBT party for Gays, Lesbians, Bisexual and Transgender people. I said, no, it was a BLT party, and everyone is welcome, including vegans.
Thus the GLBT Sandwich: What vegans make when invited to a Bacon, Lettuce and Tomato sandwich party. They don’t covet the woven bacon, but they admire the cleverness and bring their own twist to the sandwich-
Fresh Garden Tomatoes- try Cherokee Purple, Green Zebra, Gold Medal, Japanese Trifele Black, Kellogg’s Breakfast Organic from Seed Savers Exchange.
Fresh lettuce leaves- try Butter lettuce, Romaine, Baby Oakleaf, Bronze Arrowhead.
Veganase- or hummus, or other vegan mayonnaise like spread.
Guacamole- this can be bulked up and brightened with frozen peas. (Make regular Guacamole in a food processor add frozen peas 1/4 cup per avocado).
Fake bacon- like Lightlife Smart Bacon
Vegan Cheese slices- like Spicy Chao Cheese.
