The easiest soup ever- inspired by a food truck and an art open studio. Next time you need to whip something delicious up in a hurry, try this:
1 can garbanzo beans
1 jar curry simmer sauce from Trader Joes
1 can light coconut milk
1 cube vegetable bouillon plus four cups water or 4 cups vegetable stock
1 cup red lentils
Cook the red lentils in broth. Add garbanzos, simmer sauce and coconut milk. This soup is delicious puréed or purée half and serve with the remaining half folded in. Heat to serve. Garnish with fresh chopped cilantro or flavored oil- I like basil, sesame or hot chili oil.
