This year, in December, I received an unmarked box of 25-30 potatoes. They had a thick blond skin and, when sliced, inside looked like fresh Concord grapes. Mom. I know she sent them. She had been talking about them at dinner one evening.

I love wasabi mashed potatoes with diced bits of pickled ginger and sesame oil. These purple potatoes pair perfectly with these flavors- salty, tart, the sweetness mellowing the bite and tang of the ginger and wasabi.

Wasabi Sweet Potatoes
4-5 Hawaiian sweet potatoes or other sweet flavored potato
1-2 Tablespoons prepared wasabi
1-2 cups miso broth (Trader Joes has a nice boxed miso ginger broth that works well).
1/8- 1/4 cup of pickled ginger, minced
2-3 Tablespoons of toasted sesame oil and Tamari soy sauce for drizzling on top

Peel and boil the potatoes. Drain. Mash with miso broth, wasabi and ginger.
Serve with toasted sesame oil and Tamari soy sauce.
