My dad made five things really well. This is a vegetarian version of his Chorizo and eggs.
Sauté in a large pan:
12 oz Soy chorizo
16 oz Tofu soft or firm depending on texture preference
Serve with warm corn tortillas.
Nopalitos, sautéed shishito peppers, corn, diced fire roasted green chilies and/ or salsa of choice
Chopped cilantro, diced green onions, minced Cuban oregano, soy, Daiya or other cheese, sliced avocado
