Soy Chorizo breakfast

My dad made five things really well. This is a vegetarian version of his Chorizo and eggs.

Sauté in a large pan:
12 oz Soy chorizo
16 oz Tofu soft or firm depending on texture preference

Serve with warm corn tortillas.

Cooking additions:
Nopalitos, sautéed shishito peppers, corn, diced fire roasted green chilies and/ or salsa of choice

Topping options:
Chopped cilantro, diced green onions, minced Cuban oregano, soy, Daiya or other cheese, sliced avocado

Salad days

Veggie version of Chinese Chicken Salad

1/2 large head of Napa cabbage, thinly sliced
2 cups of lettuce mix
1 bunch bok choy, thinly sliced
2 stalks of celery, diagonal cut
1 bunch of cilantro, minced
1 bunch of green onion, minced
16 oz of Savory tofu, cubed
Annie’s Shitake Sesame dressing
1/2 cup roasted, salted, peanuts
Wonton crispy things, optional garnish
