I woke up this morning thinking pancakes or biscuits or muffins. I found flour and cornmeal and blueberries. The result is a cornbread muffin like biscuit.
The recipe is as follows:
Preheat the oven to 400 degrees F.
In a medium bowl combine dry ingredients
1 cup whole wheat flour
1 cup unbleached white flour
1/2 cup cornmeal
1 1/2 teaspoons baking soda
1/4 teaspoon salt
Zest from one lemon (awesome with a micro plane grater)
3 Tablespoons ground flax
3 Tablespoons date sugar
1/4 cup poppy seeds
In a large bowl combine wet ingredients
Juice from one lemon
1/3 cup canola oil
1 teaspoon lemon extract
3/4 cup honey or agave
3 Tablespoons raw apple cider vinegar
Mix wet and dry together until just moistened, fold in 1/4 cup of frozen blueberries or corn if you prefer. Mixture will be thick dough which can be spooned into muffin papers and cooked for 12-15 minutes until golden brown on top and a toothpick inserted comes out clean.
