1/2 cup cashews
1/4 cup of water or almond/rice/soy milk
1 teaspoon of vanilla
3 Tablespoons liquid sweetening (local honey, agave nectar, or brown rice syrup)
In a blender pulse chop the nuts until they resemble a coarse meal. Add water, vanilla and sweetening blend 3-5 minutes until creamy. Use non-dairy milk and less liquid for a thicker creamier consistency.
Add more liquid for a cashew non-dairy milk. Top with fresh grated nutmeg and serve instead of egg nog.
